Spinach Salad w/ Warm Bacon Dressing

Recipe Ingredients
- 2 cloves garlic (or 2tsp minced garlic in oil)
- 2 tsp sugar
- 1 tsp dijon mustard ( I make my own dijon mustard - see below)
- 6tsp lemon juice
- 1 package maple flavored bacon
- 1/2 lb fresh spinach
- 1/2 pkg sliced fresh mushrooms (or as much as you like)
- 3 green onions
- 1/3 cup vegetable oil
- 3 hard boiled eggs
- dash of salt and pepper
Preparation
This is one of my favorite salads.
Mix garlic, sugar, mustard, lemon juice, salt and pepper in a small bowl and let stand for 30 min.
If you do not have dijon mustard you can use the following ingredients:
1 tsp regular mustard
4 tsp mayo
1 tsp fresh ground horse radish (I keep a small jar in the frig, cause we love it)
1 pinch salt
1 pinch mustard
I actually like this combination better than dijon mustard
Brown the bacon and set aside.
Now add two tbls of the bacon drippings to your dressing, and continue to let it rest.
Slise or chop your fresh warm boild eggs.
Place the spinach in a bowl then add your mushrooms and green onions and the sliced eggs.
Add the bacon.
Then add the oil to your dressing and microvave for just a couple of min to make it nice and warm.
(I actually like the dressing mixture without the vegetable oil. I just double the ingredients except for the bacon drippings, warm it up and use as is. It's much more flavorful and not so oily.)
Spoon onto your salad, add a dash of salt and pepper, and dinner is served.
