Sorekai(Bottle gourd) Halwa

Recipe Ingredients
- 1 whole bottle gourd(medium size)
- 2 cups sugar(or more according to taste)
- 1 cup milk
- 1 cup ghee
- 2 pinch Elaichi(cardamom)powder
- 5-6 almonds and cashews(chopped)
- 1 tsp raisins
Preparation
Peel the skin of Bottle gourd, scoop out the seedy and tender part inside it which of no use. Grate the remaining gourd.
Pressure cook Milk and the grated gourd in a cooker for 1 whistle. Let it cool down.
Heat the pan(prefarrably) non stick, in a medium heat, add the cooked gourd to the pan, then add ghee and sugar to it and mix it well.
Keep on stirring at regular intervals. Add little more ghee if the gourd is sticking to the pan.
Continuosly stir when Halwa(gourd) begins to leave the pan(doesn't stick to the pan).
Low the flame at this time and continue to saute. ghee floats to the pan, this is when u know that halwa is done.
By this time heat 2tsp ghee in other pan, add chopped almond and cashews, then add raisins, fry till raisins bulge. Add all this to halwa with Elaichi powder and mix it well and remove it from the stove.
Serve when it cools down.
