Southern Spaghetti with Cheese Sauce

Recipe Ingredients

Southern Spaghetti with Cheese Sauce. Ingredients
  • 1 lb spaghetti
  • salt
  • 1tbl olive oil
  • 1 lb ground sirloin
  • 1 med chopped onion
  • 2 tbls chopped garlic (minced in jar is what I use)
  • 1 tbl black pepper
  • a couple squirts of your fav hot sauce
  • Worcestershire sauce (I just put a couple of good chugs in)
  • 1 tsp ground cumin
  • 1/2 cup sugar
  • 1/2 bottle/can light beer or 1/2 cup light rice vinegar
  • 16 oz of your favorite jar tomato sauce (traditional ragu is great)

Cheese Sauce:

  • 2 tbls corn starch
  • 1 cup chicken stock
  • 1 cup milk
  • 2 1/2 cups shredded cheese (I like cheddar and monteray jack)
  • 2 Jalepenos w/out seeds chopped
  • 3 scallions chopped

Preparation

Prepare ingredients for sauce.

Garlic bread, with lots of butter garlic and some parsley and paprika for color.

Brown the meat in a sauce pan, in the olive oil. Add the onion and all of the rest of the dry ingredients the worcestershire sauce and the hot sauce. (Drain off any excess fat before adding the rest of these ingredients if necessary). Once you have added all of the ingredients, add the tomato sauce and let cook for about another 5 min.

Cook the spaghetti according to the box directions, drain and add to the spaghetti sauce.

Melt the butter in a small saucepan and then stir in the flour, once that is mixed well add the chicken broth and then the milk. Let thicken for about 2 min then add the cheese and mix well untill melted for about another 2 min. Remove from the stove season with a little salt and peper then stir in the jalapenos and the scallions and serve over the spaghetti.
